Biscuits For Mama



My mother was a wonderful cook and baker, she could cook anything and her pies, cakes and cookies were fantastic. She could NOT bake a biscuit. No matter who gave her what recipe, or how many times Mommy, my grandmother tried to teach her, Mother's biscuits were only good if you wanted to use them as rocks. Not even syrup could soften them enough to keep them from breaking our teeth.


Biscuits are one of my most favorite foods. I can neither cook nor bake. Last week I found Tippers Granny Gazzie's recipe for no fail biscuit baking, Make Do Biscuits.  Tipper is author of the Blind Pig and the Acorn and a wonderful mother to her two girls. Thanks Tipper for sharing Grannies Recipe. NOTE: Tipper and her Granny use home made jam, mine is the bought kind.


I am here today saying to my mother in Heaven,

"Mama! I baked the softest, melt in your mouth biscuits and if you were here you could to."

Recipe:
2 parts self rising flour to 1 part Whipping Cream.  

THAT'S it. that IS the recipe. I Kid you not.
I made these SQUARE biscuits by mixing 1 cup flour 1/2 cup whipping cream, stir, knead, roll, cut and bake at 400. Ten Minute Biscuits. Soft Biscuits.

Madsnapper biscuits are square, because I have no rolling pin or biscuit cutter, so I MADE DO, that is what these biscuits are called. Make Do biscuits. I flattened with my hands and cut with a knife and baked in my toaster oven. they melted in my mouth. and Bob's mouth, but I did cry when he took the one I offered him.

Sounds simple enough except I have never heard of "self rising" flour. Also very unsure of the definition of biscuit. I thought biscuit was British English and cookie American English for the same thing...

That's nice. I can make bisquits but I've never made them from scratch. I'm sure mine, if I did that, would turn out as everything else I cook from scratch - just like your mom's bisquits. I think I may try that recipe.

Oh - the biscuit cutter? I've always used what my mom did --- a flour dipped glass top. :) But you'd have to roll the dough out first.

Cute story--so real--and I wrote the recipe down. The photo reminds me of some of my mother. Very Pretty. oh yes--my grandmother would dip a glass in flour and use it as a biscuit cutter. :)

Get out! I might could do that. I had a biscuit week several years ago. I made about 20 batches of them in a week and they were all awful. Have never made a scratch biscuit again.

MOL my mom cannot make biscuits but I can you see kitties are famous kneaders and biscuits. The secret is in the kneading. FYI. In case you did not know when a kitty gets on something and starts pushin at it with her feet it is called making biscuits

I'm crying now and I think this is probably the most touching Mother's Day post you have done. I remember the picture of your mom, it is very good and she is beautiful, you can almost see her spirit in it, it is like she will start talking any minute. I don't have a rolling pin either. If I need one, then it is too much trouble to bake. I want to make these for the girls, especially Ella. We get her KFC biscuits. How long did you knead? How thick did you pat it out? Then you cut it and put it in an 8X8 pan in the toaster oven? Do they have to be separated? I use the toaster oven for any and everything that fits in it. It makes good muffins. You can tell I am worse at biscuit making than you and have never made any.

My Mom was a great cook and baker. I wish I had gotten some of those genes!
Her biscuit cutter was the rim of a glass too. That's "Make Do" too.

Sandra, what a nice tribute to you mom...I love the old photo and well, I never learned to make mouth watering biscuits either. I just got some strawberries and was thinking that would be good to have over those biscuits :)

My biscuits are cat head biscuits...when I was a girl Grandmother made huge biscuits. So huge it took both my hands to bring one to my mouth. Grandmother called them cat head biscuits...huge, light, fluffy...just the way I make them today.
Your biscuits look delicious and wonderfully easy; well done!

Love this post in honor or your Mother. She was a beautiful woman, inside and out. I can see why your Daddy picked her out. Her sweet sixteen picture is gorgeous!
I am going to try the bisquits. When we use to make bisquits at home, we did not have a bisquit cutter. We did what RoeH did, we used a glass. Works great! We also would scoop up what we thought would make the size bisquits we wanted and rolled the bisquits around in our floured hands and pressed them onto the cookie sheet lightly and left our finger prints on them for a little decoration, I guess. If you do that you do not have to roll them out. Not so much mess to clean up.
You know I am lazy...

I wish I could make biscuits like my mom...NOT your normal biscuits but the grand kids loved them. She never measured anything...well, not for making biscuits, cornbread, or pie crusts...
