1001 ways to fix a Burrito Bowl

Snappers Left Over Burrito Bowl, we both love this

I am down 39 pounds and still struggling along eating healthy since Jan 20th. My food photography skills are NIL...

NOTE: THIS POST HAS BEEN IN MY DRAFTS FOR 2 Months..... the book was a gift from way back when. The weight loss is correct as of 8/4...

In a prior post I said I used chicken, black beans, bell peppers and garlic and served on a bed of riced cauliflower. delish.

I customize this with left overs, and we have this meal once a week, but it is always a little different.  This week my left over ingredients...
Pork Roast
Bell pepper
Olive Oil
Garlic
frozen spinach
black beans
brown rice
salsa
fat free Greek Yogurt
Wrap the left over mixture from Left Over,  in a Low Carb High Protein tortilla wrap (only 50 calories in wrap) and you will find 1001 ways to make this dish.. Down 30 pounds and dropping each week for 21 weeks.


My friends Joe and Joan gifted me this wonderful book of 500 recipes and lots of info on losing pounds sensibly.

So proud of you, Great job. Now if I can only get myself to follow a good diet that will help me lose the weight. At least you can get Bob to eat the things you make. Wade is so picky and won't eat most of the things I want. The burrito bowl looks really good. I would eat that but I'm pretty sure Wade wouldn't

Hello Sandra, congrats on your weight loss. You are doing great. This burrito bowl recipe sounds yummy. I never tried the cauliflower rice, I would try the brown rice. Chicken and pork both sounds delicious. Thanks for sharing.

You are doing a great job losing weight. - I like a lot of things in your bowl. We however don't eat brown rice (my mom hates it) so I cook white rice instead.

I applaud you Sandra for sticking to your healthy eating. And losing that much weight. That is tremendous.

Hubby and I eat like that. Hubby has loss more weight then I and faster. Grrrr. I started exercising in March and my operation took place end of April this year. Plus ate healthy food. My hubby loves to cook. So he prepared all our healthy meals. Still does.
My snacks are M and M's. It is a wonder I have not gained. My night snack or Cheeses. Not both. If I did not move . Then I would be back to my bad weight.

I loss 20 pounds. Have not gained back but have not loss.
Now for me it is like a maintence. Stand still.

The weather in Canada in my part of Canada . Thunderstorms and fork lightening and Tornado warnings. rain and more rain. I feel like I am living in England or scorching hot Florida. I think all summer I have seen sun for 12 days max. Worse Spring too and now summer a bummer.
My Canadian friends will know what I am talking about.

I walk the halls in my apt on those days I mentioned.
And still doing exercises for my next operation on left knee.

So I am thinking the weight I want to still lose will
be after operation.

Great encouraging post Sandra. It is hard. I had know choice. My surgeon insisted.

Before I was the one who used to say. I will lose but never did it fully. Like you. You want too.

Or your Dr or surgeon kicks you in the butt.

Which I think with you. You made up your mind and joined
Tops.

I'd not thought of using spinach, but we both love it. The only ingredient I'd try and pass onto the dogs are the black beans ... and I suspect my girls would even turn up their noses at that. LOL!

Just like chili and spaghetti .....fixed so many different ways. 39 lbs...you are rocking this! Me -63 then I have gained 4 back....now to get in gear and lose that and more.
