Scrumble

 


I read about Yam's Scrumble, HERE . She is camping around Scotland in her Big Grey Van and this is how to cook and entire breakfast on a single burner hot plate.
Yams recipe is this
**Scrumble is a cross between scrambled eggs with toast
and eggy bread; butter the bread, chop up, and saute until a little
browned and crispy, then add the egg, whisked with a little milk
and seasoning, letting sit until egg mostly set, then flip over to ensure
full cook of the egg. It has occurred to me just now that sprinkling sugar
would make it a French Toast cheat as well!

I can't eat dairy, milk or butter, and used slice of French Bread. Cubed it, sprayed pan with avocado oil, browned cubes, whipped and egg with soy milk, added a little seriously sharp cheese, poured over bread and Voila my very on IBS friendly Scrumble. Beau and Bob both had a bite and gave it a thumbs up. 

We went for a ride last week and I took a lot of the colorful houses at Village of the Arts. I will be posting them a few at a time here and there. The colors make me happy

I am making this; it is right up my alley!! I like the first house the best, the dark green one. It is both colorful, yet classy.

A couple of days ago I had scrambled eggs and a slice of toast for breakfast. Unless you include the toaster that’s a one pan meal. Three nights ago I made fried rice in the wok for dinner (there were leftovers for a second meal) - another one pan meal. In fact, we use the wok at least a couple of nights a week so one pan meals are quite common here. A stir fry can be created in no time at all and is always delicious and nutritious. Here is what I typically do. Add a little oil to the wok, add shrimp and cook for about two minutes. Remove. Add onions, garlic, hot pepper flakes, cook for about a minute and then add bell peppers, broccoli, bok Choy, Napa, mushrooms, bean sprouts, peas…….whatever you have on hand. Add back the shrimp, stir it all together, add the sauce of your choice (we make our own) and voilà, it’s ready. We serve it over rice or ramen noodles, so I guess that makes it a two dish meal, but we make large batches of rice (always basmati) and freeze in containers containing enough for the two of us.

Carbs aside, this sounds delicious! Unlike me, Tom doesn't normally like eggs but I think he would go for this.

If this was an episode of House Hunters, I'd like the green house with the yellow door.

Isn't that clever!? I like the recipe. We wouldn't add sugar and could use our Sola Bread (low carb's/no sugar). Might wanna try that. Thanks.

Sandra, I always love how you make someone else's recipe your own.
Looks like a great adaptation and not fussy at all.
I do 2 fried eggs ( a little avocado spray in the pan)with sliced mushrooms every morning. Seems to do me really well and then we have an early dinner.
On another note..hard to realize and accept that our good friend from church passed away. We attended his Celebration of Life on Thursday. It really was a beautiful service but he will be missed deeply.
Great news, our son (the nurse)just made his final alimony payment to his ex. He's finally free after 8 1/2 years of exorbitant money going out of his paycheck. We are so happy...the ties are finally broken.
