To Much About Flour?

 


This is the flour I bought one month ago today. 
Most of you know I gave up sugar 4 years ago and white flour on June 1st to lose weight. If I eat white bread, or pasta, I crave more and more.
I can eat bread once a day and hold at same weight. To lose I have to give it up.
I have a sugar addiction, one bite turns to 40 bites. 
White Flour turns into sugar as soon as it hits our digestive system.

 Because I feel a need for bread for breakfast, I tried the gluten free and I love the crepes I make with it.
the good news is, eating a crepe doesn't make me crave other breads or foods like eating white bread does.
I found I can add a tablespoon of Coconut or Almond flour to the Tapioca flour, just to use up what I bought and hate.
NOTE!
Gluten Free flour is not a way to lose weight. It does the same thing as white flour.
It is NOT good for diabetics.
Tapioca Flour has ZERO nutrtinal Benefit.
The only benefit is that it is gluten free .
It doesn't upset my IBS
I am bummed because I thought I found a way to have my Bread and EAT it too..

Good news is, with this new bread I found at Wal-Mart, I can alternate days using the crepes and this bread for one meal a day, no stomach problems and it fulfils my desire for bread.
80 calories per tiny slice, has nutritional value and well toasted taste good with egg or peanut butter or cheese on it.
Must be refrigerated or frozen after opening. I freeze it and toast it twice 


All three of the flours I bought are HIGH in the glycemic index. 
With Tapioca the highest of them all.
I assume that is why it is my favorite.

BREAD IS BREAD no matter which flour it is made from.
MOST of the gflours are high in calories!

Warning!
Treat these flours with care, some of them are very high in calories, as much as 600 per cup. Yikes
Tapioca starch has a high glycemic index. Foods with a high glycemic index can cause a quick spike in insulin and blood sugar, and should only be consumed in moderation.

Perspective

 


I bought the above pillow pad in April during the pandemic lockdown.
I bought it for my kindle paperwhite, reading in bed, my smartphone and my tablet.



Now I use it like this, and sit the pillow on my lap.
without the pillow my tiny little Chromebook
 also sits on my knees with my feet on ottoman, on my chest while lying in bed, watching YouTube

It is perfect for standing at the kitchen counter.

The tv with red is 47 inches big, the Chromebook is 11.6 inches.
from my rocker perspective, it looks like the laptop is bigger than the TV.

Random Thought!  

I am out of Tapioca Flour, and can't find it anywhere!

I bought Cocoanut flour and almost gagged on it and then got Almond Flour and I ate it but UCK!
Even Amazon is out of it. Health Food store is out, Walmart is out.
And now i have 2 bags of UCKY stuff I don't like
I ordered Tapioca Starch from Amazon, because I love the crepes for breakfast.
Does any one know if Tapioca Starch is the same as Tapioca Flour?

My Quest Part 2

 Continued from Prior Post yesterday


I mentioned Tapioca Flour yesterday. Collage above is my new favorite Breakfast, A crepe made from Tapioca flour, 350 Calories.
1/4 cup flour in large measuring cup
Break 2 small eggs into another cup, add a few drops of olive oil, 2 tablespoons of Lactaid milk
and a sprinkle of salt. 
Whip the egg mixture with a fork, dump in Flour, whip with fork until blended. ( I have no blender)
preheat pan to medium heat for 2 minutes, pour batter and have fun flipping it over.
1 table spoon natural peanut butter, spread on while hot and a spoon of Apple butter.
You can use what ever topping you want.
I have a ceramic 2 egg pan that was working fine, and yesterday bought the large pan because I LOVE the little pan. 
Photo above is a crepe the size of pan, cut in half.
This amount of crepe and I am full until lunch time, Egg and Peanut Butter is Protein,
Protein kills the desire to eat.


Lunch was meatless, low fat, low carbs, gluten free
TACOS!
Bob had requested Tacos for this week, I made enough of REAL taco mix for 4 days, and enough of MY tacos for 4 days.
One day cook, 4 day left overs.
 Yellow Corn Gluten Free Tortilla, also low calorie. Picante or Salsa is good to.
I steamed a pot of
Dark Kidney beans drained
Frozen Peas
Frozen Mexican Corn with red peppers
Heat tortilla in non greased pan, few seconds on each side, and fill with veggies, cheese, lettuce, tomato and Picante on top.
Delicious and this can be made from any veggie you like, I will be using chicken or fish once in a while and change up to Salsa.
the tortillas can be used a thousand ways.
Low calorie, low sodium, low carbs, lot fat

I used about a 3rd of the bag on the frozen veggies and save the rest to use that in egg omelets or stir fry.
Word of Warning! Gluten Free does NOT mean diet food. READ THE LABEL
Walmart was out of the bread i bought two weeks ago, and after reading the labels, I found sugar, SALT, Calories, Cholesterol in high amounts. 
I went to the frozen gluten and found Glutino English Muffins.
 I LOVE THEM.
Then I read the label. One muffin has half a days quota of salt. YIKES!
I will eat them but not buy them again.
NOTE: someone said love is the wrong word to use unless it can love you back, it works here because they love making my stomach feel better.

I had one for breakfast to TEST them with Peanut Butter and YUM.I will use an egg, or cheese on one and it is the same calories as the crepe.
Other muffins found were full of sugar and almost all gluten free products are HIGH in sodium

BTW, the black cup in the photo above is sitting there to remind me to tell you, I filled it with coffee to take it in the car. I shop at 6 am and I drink one cup of coffee at wake up, and have been drinking TWO.
this causes me to walk in the door and go straight to the rest room
I stopped drinking the 2nd cup, and can ignore the rest room, but on the way home  I am dying for coffee. I walked out the door into the garage, saw the sheets were ready for the dryer, sat my STUFF down on work bench and transferred the sheets. Half the way to WM I realized the cup of coffee remained on the work bench. I picked up Keys and missed the 7 inch CUP.

Day 28 of Quest to Pre-Pandemic Weight

I started my quest to lose Pandemic Weight Gain, on June 1, 2021 today is Day 28,
 7 lbs down, 3 to go!

If I typed here what  I am thinking you would be reading till the cows come home!
Now my Quest is to tell you the story in condensed form
HA HA HA

First important change
MOVE MORE, MOVE MORE.
Get UP!
Any and All Movement Counts
My program is.......
Pool exercise, legs, arms, back,, 20 minutes 5 days a week, 
Recumbent Bike, 3 days a week, 
Walk Beau Every Day
Floor exercise, on bed, no floors for me, can't get up.
Squats, 20 per day, 5 days a week.

Dance to YouTube, March, Side Step, Wave Arms, Pump Arms. 
I don't do all of this every day, it needs to be changed up. Doing the same exact thing, the body adjusts to it.
I do any or all of above, rotating days, to a total of 1 hour or MORE.


Housework counts!
If you get HOT doing housework that is exercise

Veggies, fruits, Protein, Fat, good carbs. 
Eat Breakfast.
Calories Counted and Bite it, Write it!


Tomato's $8.00 Banana 19 cents for one. I can't eat them and they are my favorite food, this one for bob.

I don't eat sugar, and to jump start my weight loss, I decided to give up  bread until I was back where I was in March of 2020. along the way, a blog friend introduced me to Gluten free flour.

Tapioca flour is my choice, and I am about to try coconut flour.

By accident, I found out my stomach problems that I thought was IBS, are caused by
White Flour. By the end of the first week of NO Bread, my bloated stomach was no more.
My stomach pains in early AM were gone. Also gone early AM diarrheas' gone . 
On day 24, we had Spaghettis Sauce on French Style Green Beans, in stead of Spaghettis noodles.
Day 25, I decided to have a plate of  REAL Spaghettis and the next morning, guess what was back?
White flour bloat, pain and a few trips to the potty.
WOW! I am now gluten Free and feeling like a new person.

My Quest to lose weight, and what I have learned along the weigh and how it is changing my life.. 
But Weight, there is MORE

Gluten and ME

 


I have been off gluten, all white flour and my IBS is so much better. I am eating heathly carbs, lots of protein and  even my bread, tasteless as shoe leather but edible, is only 3 net carbs for one slice, 5 protein, and only 70 calories. the book is where I journal every bite  I put in my mouth. it is on the kitchen counter and If I bite it I write it down. I keep my daily calories to 1250 which allows me to slowly lose weight and not feel like I am starving. I started June 1 and have moved only down since
 then. 
A few things I am eating

Leaf Lettuce Wrap
. A tiny bit of mayo, crumbled meat loaf, minced tomato.
I also did this with chicken and fish. Large Leaves and I do 2 of these. Also sprinkled a few sunflower seeds on one of them.

I am using the crepes made from Tapioca Flour and using different fillings.
I bought Cocanut flour to try.

Alert, do not bread fish with tapioca Flour. IT STICKS TO PAN LIKE GLUE. taste good though

Breakfast find is place 1 or 2 oz of Seriously Sharp Cheese in pan and let melt, scrape loose and then place on one piece of Sola bread, add scramble egg on top. The cheese kills the taste of NON GLUTEN bread and egg which I don't care for.
Any breakfast ideas appreciated. 
Cottage cheese and black berries are good but just not what I want.
I am forcing myself to eat oatmeal twice a week, even walnuts and cinnamon can't make me like it.
I can get it down if I use a spoon of peanut butter

Out of control part 2

 


I read a post with a recipe for sandwiches made with Tapioca Flour. I had no idea it existed.

I rushed to the health food store, purchased the flour and other items seen yesterday. Any thing that would make me think i am eating Bread but has no white flour.

I bought without PLANNING, and ended up with all the crackers have flax and so does the made fresh in store almond butter. 

You can guess what that did!
The small jar is Yoders Homemade Apple Butter, no sugar added and only 10 calories per spoon.
This Apple Butter is saving my life by giving me low cal, sugar free Good taste.

My food plan 1240 calories per day and I Eat 3 meals, 2 snacks a day.
Fruits, veggies, salads, hummus 
lactaid cottage cheese and milk.

Please tell me protein ideas that are not meat, eggs, protein drinks

I struggle with meat, and
Eggs gag me unless they are drowned in catsup, or covered with cheese OR wrapped in BREAD

Any ideas on how to hide eggs will be appreciated.

I am Lactose Intolerant oy vey and must be gluten intolerant also.
Whte flour aggravates my IBS this does not



After reading the Calorie content of the muffins, 295 each, and I only eat 1250 calories a day. I tried to think of something I love that I use white flour.
Daddy's hoe cake came to mind. Flour, egg, milk, oil and fry in fry pan. I love one for breakfast.
It is like cornbread consistence but made with flour.
Daddy made a big one for all of us, but I make a one person one.
I decide to make one using the new flour

I used 1/4 cup Tapioca flour, 1 egg, pinch of salt, olive oil and Milk to right consistency
whipped it together in a bowl, sprayed my little pan and it made two of these about the consistence of a crepe.
I did not realize the open one was blurred and I ate it. ha ha
I spread peanut butter and apple butter inside and folded over.
LOVED IT.
Any thing that goes in a crepe will work. also made one with cheese. yum.
It turns out 2 of these with filling is 300 to 350 calories which is what have for breakfast.

It did NOT make me crave more flour or any other food. I can now have my flour and eat it too..
Of course NOT every meal. I made mine one crispy one not. loved it both ways. 
I am on a search for protein options, if you have any to share.
