Sugar Free, fat free Pumpkin Pie

I have made this several times. Since I gave up sugar on Feb 26th, 2017 I am always looking for sweets that are sugar free and as fat free as possible.

This is the 3rd one of these I have baked. it is basically a dump ingredients and stir and dump in the pie plate, and cooks for about 30 minutes in my convection oven.

I customized to my taste and what I had on hand

1 (15 oz) can pumpkin
1 1/4 cusp skim milk (I used fat free Lactaid)
3/4 cup granular sweetener such as Splenda. (I used liquid  saccharine, any type will do)
1/2 cupe egg substitute (I used 1 egg)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger (skipped this one)
1/2 teaspoon ground nutmeg (skipped this one)
I had neither of these spices and the pie is delicious, comes out like a custard.. makes 8 servings, 48 calories per serving. the whole pie is only 384 calories. I have even had it for breakfast a few times.

I love pumpkin pie! It sounds great, but we don't have a convection oven anymore. Sigh. 🙁

I've had pizza pie for breakfast in my youth, but never pumpkin pie. I should try that sometime. (The sugar substitute...is that measuring "cup"?

This is something I should try for Roger. I bet he would enjoy it. Of all things, I LOVE the smell of pumpkin pie. But cannot stand the texture.

Brilliant! I'm embarrassed to admit, I had to Google 'convection oven.' We don't have one, but the description sounds really similar to my Ninja Foodi. Now, if I could just convince Tom to eat pumpkin. (*sigh*)

Sounds like a good custard-y dessert. I would have to put the pumpkin spices in though.
I really like that pie and actually any pie for breakfast will do. HaHa...Good on the calorie count too...

Glad you found a pumpkin pie recipe that works for you, Sandra. I tried a crustless version a couple of months ago, but it wasn't one we enjoyed -- back to the single crust we went for our Thanksgiving dessert!

yum. that looks really good. Pumpkin is great for cutting calories and fat. Have you ever mixed a can of pumpkin with a cake mix? It's just those two ingredients and you bake it. Of course that would have sugar in it though
