News from my Kitchen


Above are the 2 rotisserie chickens from Publix. I pulled all the meat off them and stored in the fridge. We had 4 mid-day meals using the off the bone chicken. And Bob had sandwich chicken for evening meals.
I am always looking for easy ways to feed us! feel free if you have a good idea to share it with me. Anything that requires very little cooking will do

 

Sweet Potatoes are healthy for dogs and humans. Microwave, peel and cut into slices and store. 
It's a great snack for Beau and for me.
they are soluble and IBS friendly.

 Alert! If you put a sweet potato in the microwave and cook it and leave it there for 28 hours, it dries out and taste awful.... Looks Ugly

Last week, I stood in front of the bin of not so pretty, dry looking taters. Sifting through debating if they were edible.
the Wal-Mart employee, a woman I see each week, said, if you will give me a second, I have a fresh batch to put out.
She came back with the prettiest ones I have seen in ages, that is one above.
There are still good people in our world...

How sweet of her! I always buy the rotisserie chickens when I see they have recently put some out. You can smell them when you first come in the store. I cut the meat off the bone as soon as I bring them home. I make quesadillas, chicken salad, chicken with mashed potatoes and gravy, chicken spaghetti, chicken and noodles, chicken picatta, chicken and taco rice.

That chicken looks delicious can you find tortillas that you can eat? Chicken enchiladas? Easy. Hardly any preparation time Tasty!!

I frequently buy the rotisserie chickens at Walmart. I'll have it for dinner one night then take the rest of the chicken off the bone and usually make some kind of casserole out of it the next day. That will last me several days. I normally will eat 2 days worth of leftovers and put the rest in the freezer for quick meals.

Yes, there are still good people in the world. I used to use rotisserie chickens a lot. Kind if got tired of them...but I lived them in a salad which I am betting you cannot have.

I'm giggling so at the mention of your 28-hour zapped sweet potato. I can almost smell the aroma of those rotisserie chickens! Our favorite is the lemon pepper, but it's been a while.
Sadly, the only retail employees I see going above-and-beyond are those at Publix. With an eye to watching our nickels and dimes, we only shop there once a month. 'Recreational shopping' as another blogger puts it.

We love to grill and we always do extra to have enough for lunches or even a second dinner. The crockpot is good for that too. I love sweet potatoes...not overcooked though! hahahahaha!!!

Those rotisserie chickens look tempting. We went food shopping today and everything is creeping up in price. We have to think of ways to save on electricity and gas too. Like you I cook twice as much in one go so that we have enough for another meal and sandwiches. You have helpful supermarket staff and we do too. A kind action and a smile makes all the difference.

I love chicken and Turkey could eat either every day but my B is not a huge fan of poultry. He will eat it every so often. I'm still waiting on my microwave to arrive.

I love the rotisserie chickens. We get ours at CostCo for $4.99 and get about as many meals out of them as Ginny does. they sure save time.
Wedding went well and lots of fun. We have been busy with younger son and family...hopefully photos coming soon.

That was very nice of the woman. I need to put sweet potatoes on my list. I love them. When we get a chicken from Costco I always pull the chicken apart. I usually freeze it and we use it for tacos.

I love rotisserie chicken. although sweet potato's is a fave of mine I avoid them because they would raise my glucose. big hugs!

We use ready grilled chickens too once in a while and after most of the meat ts off we boil the bones to create a chicken stock that we use in other meals.we use yams more than sweet potatoes.Buddy does not like them. I love them.
