9-1-1 Make Do Menu


We eat lunch as our big meal of the day. At 11 AM on Wed. I realized I had not planned ahead . The freezer was full of Frozen Food.
I could not call 9-1-1 because we received an email, automated call, and TV notifications that 9-1-1 was down all over Tampa Bay 7 counties in our state without 911.

 Amazing! SCARY!

They did say we could TEXT 911 or dial a special number. I decided not to TEXT for ideas on what to do for lunch and came up with my Fall Back Lunch Men


I put 10 minute brown rice medley (brown rice, red rice, wild rice and quinoa) on to simmer, and
Pouring olive oil into a pan, I pulled frozen red and green peppers out and quickly chopped them, added them and garlic to the oil, drained a can of black beans and a can of garbanzo beans also known as chickpeas, threw in a hand full of frozen corn and a handful of frozen spinach.


Ready to serve, I added rice in a bowl, put the bean mixture on the rice, dropped shredded cheese on it to melt, add 2 spoons of Salsa and a dollop of greek yogurt and Voila OUR LUNCH was ready.

OMG, Sandra, take away the garlic and this dish would do me just fine!!! I am a great one for 'make do meals' and often they do involve rice - or pasta. Am vegetarian, so beans and pulses in any form will suffice. The one thing always on the go, though, is soup. Cannot go wrong with some whole and hearty soup! YAM xx

PS Harris Teeter is 5 minutes from my house. I will hop in my car for something if I forget to defrost. Or if I have enough eggs we'll have breakfast for supper.

Breakfast for dinner is a go to for me.
That's actually what I had last night.
We had spent the last 24 hours in ER for Dave.
Everythings ok.
Dr. thought he should have his ticker checked out.
Frustration because they could find nothing terribly wrong but glad they could find nothing wrong..make sense?
So back home and we both had a really good nights sleep.
The nuclear stress test just about did him in but he passed it with flying colors. His legs ache today though.
This getting old gets harder and harder...

It looks good! My daughter got me started on a meal service called "HelloFresh". So far I like it because they send you all of the ingredients and I don't have to go shopping. They let you skip weeks if you want and so I only get it about every other week depending on what I'm doing.

Oh Sandra, this is genius!
Because of our schedules (and differing appetites), Tom and I only eat together 1 or 2 days a week. Like you, I want my "big" meal late morning and am happy to snack on crackers and cheese at night ... while Tom's enjoying pork chops or spaghetti. Once I retire, something's gotta give!

That would be scary to have 9-1-1 not working. You dish looks delicious. I would enjoy that. We are not big meal planners. Most dinners are put together this way. Normally on the weekends we plan dinners but not during the week.

Maybe I'll just come to your house in an emergency. that looks pretty good.TV Dinners work well in an emergency for me.

Good GRIEF!!! It looks so good, and I could never in a million years think of doing this!! I have no creativity or imagination. It has taken me decades to think of just simple things, like an egg on top of Ramen. I guess my go to would be spaghetti. I make my own sauce quickly just using a can of tomato sauce and herbs. Or maybe something with eggs, or Spanish rice, or a tuna salad sandwich. Or egg salad. Or grilled cheese. Now I am hungry. Also, oatmeal with an egg on top, or cereal for a last resort. I cheated and bought the Lucky Charms St. Patricks cereal. BUT I have lost 20 pounds. 10 or 20 more and I will be back to my best.

This would work for me but I'm pretty sure Wade wouldn't eat it. I never seem to plan ahead for meals. If all else fails we tend to go with breakfast though

We are salad with chicken eaters for dinner...so I'usually on top of things. You dish looks nommy tho..and I might give it a try for lunch next week!

That dish sure looks good. My go to meal if I forget to thaw something out is usually bacon and eggs. I love breakfast food anytime of the day.

You definitely don't need 911 advice because you have such creativity! Our "go to" easy meal is waaaaay less interesting than that. It involves a salad first (a holdover from when I had to lose 70 lbs years ago) and a tortilla with an egg, salsa, and shredded cheese baked in the oven or fried. It's actually quite good and takes very little time. But, it loses the contest with your 911 meal :)

it does look yum! I often make whole wheat pasta and a quick tomato sauce... (tomatoes + basil + olive oil + lemon juice + garlic clove + salt + spoon of sugar... blended and reduced in a pan) plus some parmesan/cheese on top... ready in 15 minutes...
